Jalapeño Poppers

We all know that following an eating plan or a "diet" can become boring super fast.  Especially when we think we can't have certain foods, because they are "bad" or not healthy.  That's not true!!  I love taking unhealthy foods and making them healthy, especially to help out my people doing the 21 Day Fix with me.

My latest creation was jalapeno poppers.  I love spicy but my kids not so much. So with this recipe I used some sweet red peppers for their poppers and Jalapeño for mine.  And also anything with bacon and cheese is always delicious. Always.





Recipe for jalapeño poppers:

- 6 jalapeño peppers, cut in the middle and seeds removed - note the oil from the peppers is very strong so you may want to use gloves when preparing them to avoid getting oil on your hands which will burn
- 1 red pepper - divided into 4 or 6 pieces
- 1/2 cup plain Greek yogurt
- 1/4 cup of shredded cheddar cheese
- 6 slices of bacon (or turkey bacon) cut down the middle to make 12 prices in total

Directions:
- Mix the Greek yogurt and cheddar cheese together
- Add mixture to top of peppers
- Take 1 piece of bacon and wrap it around peppers
- Place on baking sheet and bake for 25-30 mins at 350
- Last two minutes turn on broiler to crisp up bacon if needed.

Note: you can keep some Greek yogurt aside and add a bit of cumin to it to dip the poppers into when they are done :)

For 5 pieces of jalapeño poppers:
- 1 green (veggie)
- 1 red (protein)
- 1 blue (fat - cheese)
